kirsten's quick and simple noodles with seaweed

1 carrot
½ courgette
½ leek
large handful of dried arame
large handful of soaked pumpkin and sunflower seeds and/or cashew nuts
enough noodles for 2 people
1 tsp thinly sliced ginger root
1 tbsp tahini
1 cup rice milk or coconut milk


1. Put arame in bowl of water to soak.

2. Heat 1.5-2 pints water in a wok or wide pan

3. While waiting for water to heat, finely slice carrot and leek

4. Add carrot and leek to water

5. Finely slice courgette and ginger

6. Break noodles into lengths of 4-5 inches as you add them to the pan and stir in well

7. Add courgettes and ginger - keep stirring

8. When noodles nearly cooked, add rice/coconut milk and tahini and stir well.

9. Drain arame and stir in, together with seeds/nuts, and serve.
