miranda's quinoa tabouleh

2 cups cooked quinoa [about 1 cup dry]
1/2 cup lemon juice
1/2 cup olive oil
optional - a good glug of flaxseed oil
1/2 cup finely chopped tomato
1 cup sliced salad onions
1 cup [or more] chopped fresh parsley
1 cup [or more] chopped fresh mint

1. Cook quinoa for 15 -20 minutes in plenty of filtered water.

2. Drain and fluff up with a fork.

3. Add all other ingredients and mix well.

4.Chill before serving, or serve warm if desired. Add extra lemon juice or anything else to taste.

This is lovely in summer and great with falafel.
