Here are some ideas on how to make yummy dairy-free mashed potato, as well as some other vegetables you can use in your mash. And I would encourage you to experiment with your own combinations.



mashed potato
potato
a generous knob of coconut oil or butter
rice or almond milk
a little turmeric and nutmeg to taste


1. Chop potatoes into smallish cubes and put onto boil or steam.

2 . Mash potatoes with the coconut oil or butter, rice or almond milk, turmeric and nutmeg. You can also use stock from vegetables you have steamed or boiled instead of the rice milk. You can also mash in some roasted garlic (see mashed parsnip and celeriac recipe below)



mashed potato and cauliflower
equal amounts of potato and cauliflower
a generous knob of coconut oil or butter
rice or almond milk
a little turmeric and nutmeg to taste


1. Chop potatoes into smallish cubes and put onto steam. When half-cooked, add the chopped cauliflower.

2 . Mash potatoes and cauliflower with the coconut oil or butter, rice or almond milk, turmeric and nutmeg. You can also use stock from vegetables you have steamed instead of the rice milk.



mashed parsnip and celeriac
equal amounts of parsnip and celeriac
rice or almond milk
black pepper and roasted garlic to taste


1. Chop parsnip and celeriac into smallish cubes and steam.

2. Meanwhile roast some cloves of garlic in a little coconut oil in the oven.

2 . Mash parsnip and celeriac with the rice or almond milk, roast garlic and black pepper. You can also use stock from vegetables you have steamed or boiled instead of the rice milk.



mashed sweet potato and carrot
equal amounts of sweet potato and carrot
rice or almond milk
a little nutmeg and grated ginger (optional) to taste


1. Chop sweet potatoes and carrots into smallish cubes and steam.

2 . Mash potatoes and cauliflower with the rice or almond milk, nutmeg and maybe a little grated ginger. You can also use stock from vegetables you have steamed or boiled instead of the rice milk, and maybe also add a knob of butter to taste.

equal amounts of sweet potato and swede
rice or almond milk
black pepper and nutmeg to taste


1. Chop sweet potatoes and swede into smallish cubes and steam.

2 . Mash potatoes and cauliflower with the rice or almond milk, nutmeg and black pepper. You can also use stock from vegetables you have steamed or boiled instead of the rice milk, and maybe also add a knob of butter to taste.
