lisa's pumpkin and apple soup

2 Chopped onions
1 Clove garlic
1tbls coconut oil or ghee
500g pumpkin peeled and cubed
2 baking apples peeled and chopped
1 pt veg stock
½ pt of apple juice or organic cider
2 sprigs of fresh sage

1. fry onion and garlic in oil for 2 mins

2. add pumpkin, apples and sage for further 2 mins

3. add stock and juice or cider

4. simmer for 15-20 mins

5. liquidise and serve in pumpkin for perfection!
