lisa's gluten free banana bread

75g sultanas (green are good) or goji berries
40g fresh cherries (optional, if in season)
110g unsalted organic butter
110g rapadura sugar (dehydrated cane juice)
2 large organic eggs
3 large ripe banans
175g fine rice flour
50g cornflour
2tsp gluten-free baking powder

1. Mix butter and sugar together until pale, light and soft

2. Mash bananas and mix with gently whisked up eggs, mix with butter mixture

3. Sieve in rice flour, corn flour and baking powder and fold into mixture

4. Gently stir in sultanas

5. Put in 2lb loaf tin lined with greased greaseproof paper

6. Bake in pre-heated 180o oven for 1 ¼ - 1 ½ hours, until it is golden and inserted knife comes out clean
