charm's pecan pie

Serves 4

pastry:
30g ground almonds
60g brown rice flour
¼ tsp ground cinnamon
¼ tsp ground cloves
2 tbsp water
1 tbsp light olive oil or sunflower oil
2 tbsp light tahini

filling:
90g carrots (finely grated)
150ml water
90g dried chopped dates
125g ground almonds
¼ tsp almond extract
60g pecan nuts


Method

Pastry
1. Put all the pastry ingredients in a bowl and blend until the mixture forms crumbs
2. Press the crumb mixture into the base but not the sides of a 20-22cm flan dish
3. Bake the pastry case in a preheated 200ºC/400ºF/gas mark 6 oven for c. 15 mins or until it is beginning to brown around the edges

Filling
1. Put the carrots, dates and water in a pan and simmer until soft. The mixture should be quite moist – add more water if necessary.
2. Place the date mixture, ground almonds and almond essence in a bowl and blend until smooth. Spoon mixture on top of the pastry.
3. Arrange pecan nuts on the surface and bake in a preheated 200ºC/400ºF/gas mark 6 oven for 15-20 mins or until the pie is beginning to brown and become firm.
